HUILE D 'OLIVE AOC DU MOULIN JEAN MARIE CORNILLE
Oil is extracted according to the old traditions :
The five olive varieties (Salonenque – Grossane – Beruguette –Verdale –Picholine ) picked only in this valley are harvested from mid – November to mid – January.
They are crushed under the granite mills and form a paste that is spread over the oil – bags ;
These oil – bags are piled up in groups of 80 and pressed, retaining the solid part of the paste (the olive marc : the leftovers of the olive pulp and the crushed stones) and let out the liquid part composed of oil and vegetation water. The oil is then separated and stored in vats where it setties naturally without any filtration.
This one and only cold pressing, by obtain a natural, sweet, very fruity – flavored product ŕf a lovely golden green color which tickies the pallet and accompanies cold salads and fich to perfection, sending shivers of pleasure down the spine.
